Exactly a year ago, we were in the middle of an 11-day road trip around the South of France. It was an absolutely massive undertaking to plan, inspired by cheap flights from Madrid to Toulouse and Lonely Planet's France's Best Trips book. I pieced together many of the different road trip itineraries in the book and added in some additional stops based on blogs and sites I'd read online. The final plan was very ambitious and had us covering quite a bit of southern France, but the end result was...fabulous (if I do say so myself). Now, when I think about going anywhere in Europe on vacation, a few places come to mind, and the South of France is without a doubt at the top of that list.
If you've been following our blog or Instagram this spring, you might be starting to wonder if we really do any work or if we're actually just traveling all the time. Well, I'm here to set the record straight...although Spain has a plethora of public holidays and there's even more for school children, we haven't been on a non-stop trip around Europe and north Africa (as awesome as that sometimes sounds). We mostly do ordinary, everyday things, like work, hang out with friends, go to the park, try new recipes, read books, volunteer, and go grocery shopping, that are just as great as traveling around.
We're now quite a few weeks removed from Madrid, and sometimes it feels much farther than that...especially when looking at these bright, sunny pictures of us enjoying the city without layers and jackets - Danny's even in a short-sleeved shirt in some of them! Feels light years away as I write this in Scotland with an inch of snow on the ground and more coming down. Apparently this is fairly unusual for this part of the country (it's snowed every day this week!), but the kids are so excited and are begging to build a snowman and saying it's Christmas! Oh yes, the park.
Making: my very last lesson plans...this is our last week of teaching as Semana Santa (Holy Week) is about to begin and most of our will students take off for their villages for an extended Easter break.
Cooking: these pulled sweet potato BBQ sandwiches and they're our favorite right now. Usually we switch things up every two weeks or so, but right now we can't quit these.
Making: plans for the summer. How can it be?! I've started penciling in a few things here and there but it just feels crazy to be looking at July and August right now.
Cooking: tonight? Nothing! Danny has an interview over dinner so I think I'm scavenging - toast, crackers, cereal - whatever's easy and around the house.
